Yerba mate is a species of the holly family with the botanical name Ilex paraguariensis, native to subtropical South America. Yerba Mate also known as Paraguay tea, is native to Argentina, southern Brazil and Paraguay and now also widely cultivated in Spain and Portugal. It is an evergreen shrub which can grow into a small tree reaching a height of between 6-15 metres.
Yerba Mate is well known for its vitamin and mineral content. It contains a variety of polyphenols such as the flavonoids quercetin and rutin and three xanthines: caffeine, theobromine and theophylline, the main one being caffeine. Yerba mate has been claimed to have various effects on human health attributed to the high quantity of polyphenols found in mate tea. Yerba mate also contains elements such as potassium, magnesium and manganese.
